
I have been trying to focus on healthy eating so I really haven’t had that many sweets lately but now I’m craving chocolate and peanut butter. Here is a recipe to make healthy, homemade chocolate almond, cashew or peanut butter cups.
These will be fairly thin and make a dozen so if you want more than that or for them to be thicker, double the recipe.
Ingredients:
Chocolate Layer
- 1/3 cup raw Almond, Cashew or Peanut Butter
- 3 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 3 tablespoons cacao powder
- 3 tablespoons maple syrup
Almond, Cashew or Peanut Butter Layer
- 1/3 cup raw Almond, Cashew or Peanut Butter
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup
- 1/2 teaspoon salt (optional)
Directions:
- Using a muffin pan add silicone liners (buy here) and then spray with cooking spray. Set aside. You can use parchment liners instead of silicone.
- Gather 2 small bowls to add ingredients for each layer.
- Stir all ingredients for each layer – one per bowl until smooth.
- Using your tablespoon, fill about 1/2 with the chocolate layer into each muffin cup
- Press into the bottom gently
- Now repeat with the almond, cashew or peanut butter
- Give the pan a good shake or use the back of a spoon to even out the peanut butter
- Place the in the freezer for 20-30 minutes
- Store these cups in the fridge
