Healthy Chocolate Almond, Cashew or Peanut Butter Cups

I have been trying to focus on healthy eating so I really haven’t had that many sweets lately but now I’m craving chocolate and peanut butter. Here is a recipe to make healthy, homemade chocolate almond, cashew or peanut butter cups.

These will be fairly thin and make a dozen so if you want more than that or for them to be thicker, double the recipe.

Ingredients:

Chocolate Layer

  • 1/3 cup raw Almond, Cashew or Peanut Butter
  • 3 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 3 tablespoons cacao powder
  • 3 tablespoons maple syrup

Almond, Cashew or Peanut Butter Layer

  • 1/3 cup raw Almond, Cashew or Peanut Butter
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • 1/2 teaspoon salt (optional)

Directions:

  1. Using a muffin pan add silicone liners (buy here) and then spray with cooking spray. Set aside. You can use parchment liners instead of silicone.
  2. Gather 2 small bowls to add ingredients for each layer.
  3. Stir all ingredients for each layer – one per bowl until smooth.
  4. Using your tablespoon, fill about 1/2 with the chocolate layer into each muffin cup
  5. Press into the bottom gently
  6. Now repeat with the almond, cashew or peanut butter
  7. Give the pan a good shake or use the back of a spoon to even out the peanut butter
  8. Place the in the freezer for 20-30 minutes
  9. Store these cups in the fridge
