Moist High Altitude Chocolate Chip Banana Bread Muffins

Living in Colorado is amazing but sometimes you have to get a little creative with baking.  With the altitude, you have to adjust the flour, oven temp and other things to get the perfect recipe!  After a few trials, I found that this is the best and healthiest banana bread recipe. Ingredients:

  • 3  bananas, very ripe
  • 1/4 cup butter, softened
  • 1/2 cup unsweetened applesauce (or 2 eggs)
  • 2/3 cup stevia or granulated sugar
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup chocolate chips or nuts (optional)


  1. Preheat oven to 350°F.
  2. Mashup your bananas in a bowl. Make sure you mash these well, there should only be very small chunks.
  3. Add your butter, applesauce (or eggs), sugar, and vanilla extract to your mashed bananas.
  4. In a separate bowl, combine your flour, baking soda, baking powder, salt, and cinnamon.
  5. Add half of your dry ingredients to your wet and mix.  Then add the other half and mix well.
  6. Add your chocolate chips or nuts (optional)
  7. Pour dough into a greased loaf pan or a cupcake pan.
  8. Bake at 350°F for 20-30 minutes.  I typically do a toothpick check after 20 minutes.  The toothpick should come out clean.
  9. Let the bread cool for 15-20 minutes before removing.
