Recipe: Baked Chocolate Pumpkin & Oatmeal Muffins


2 cups Oatmeal ( old fashioned)

1/3 cup packed brown sugar

1 ½ teaspoons baking powder

1 teaspoon pumpkin pie spice

1 egg white

1 egg

¾ cup skim milk

½ cup canned pumpkin

½ teaspoon vanilla extract

1/3 cup semi-sweet chocolate chips


  1. Preheat the oven to 350 and lightly spray a 12 cups muffin pan.
  2. In a large bowl, combine the oats, brown sugar, baking powder and pumpkin pie spice.  Mix thoroughly.
  3. In a separate bowl, whisk together the egg white, egg, pumpkin, milk and vanilla. Add the wet ingredients to the dry ingredients and stir until blended together. Stir in the chocolate chips.
  4. Use a spoon to divide the mixture evenly to the muffin cups. Bake for about 20 minutes.
